I haven’t always been a salmon lover. Salmon is my step-dad’s favorite food – I mean if we go to a restaurant and there is salmon on the menu, 98% chance he’ll order it. So growing up my mom made salmon, or another fish, a few nights a week. I was sick of it – I think I OD’d growing up. But, I grew to love salmon as an adult and now I have it a few meals a week (per usual, I am at all times becoming more and more like my mother). This is the easiest baked salmon recipe and it is insanely delicious.
Does it matter what kind of salmon you buy?
I am a huge proponent of wild-caught salmon. Did you know that wild salmon has less calories (32% less) and saturated fat (3 times less – 9.5% in wild to 30% in farmed!) than farm raised salmon? More importantly, farmed salmon has 5 to 10 times higher levels of persistent organic pollutants than wild salmon, which have been linked to type 2 diabetes and obesity. Farmed salmon is obviously better than not eating salmon, but if you eat a lot of salmon, try to get wild. Both are great sources of omega-3’s, calcium, iron, magnesium, potassium and zinc.
This is my favorite way to make salmon. For this recipe, it is best if you use a whole large salmon fillet, as opposed to smaller pieces. If you use smaller pieces, reduce the cooking time.
